Today morning I realized that I lost about 6 pounds. Yay!! It made my day and gave me the ‘ticket’ to pig on rich foods.
I bought this pack of ravioli from Costco – I am loving the choice of organic foods @ Costco. This is really easy to make. Here goes. (I had made this a couple of days ago without corn, so you can omit corn if you want)
| Butternut Squash Ravioli with caramelized onion and corn |
| Ingredients |
- Ravioli - ~ 2 lbs
- Corn – 1/2 cup
- Onions, chopped – 1 cup
- Butter – 1/2 tbsp
- Olive oil – 1/2 tbsp
- Dry red chillies, broken into pieces – 4
- Dry oregano – 1/8 tsp
- Mozzarella (I used pearls) – 15 (or use 1/4 cup, broken into pieces)
- Salt to taste

| Procedure |
- Boil the ravioli in gently bubbling salt water for 5-6 mins
- In a pan heat butter and olive oil. Once the oil is hot, add dry red chilies
- Add onions and fry until they become golden brown
- Add corn and roast until brown
- Now add the cooked ravioli and shake the pan to cover the ravioli with corn and onions
- Sprinkle salt and oregano.
- Add mozzarella, let cook for 2 mins and serve

The ravioli is sweet and the combination of red chilies gives it a nice kick. We loved it so much that we had twice in 3 days

Dear friends,
Hope you are enjoying the lovely colors of fall and the chillness in the air with some nice food. I cooked some really good stuff the past few months, and here’s me sharing the recipe for some awesome pancakes. We loved the texture of buckwheat flour and the sweet flavor brought on by the apples.
I don’t have photos to go with this; wanted to break the blogging hiatus and hence posting this with no photos.
| Recipe for Buckwheat, apple and almond pancakes |
| Ingredients |
- Buckwheat flour – 2 cups
- Whole eggs, lightly beaten – 2
- Baking soda – 1/4 tsp
- Salt – 1/4 tsp
- Almonds, grated – 20
- Gala apples – 2 (peeled, cored and grated)
- Milk – 1.5 cups ( I used 1%)
- Nutmeg powder – 1/8 tsp
- Butter, melted – 1 tbsp
- Brown sugar – 2 tbsp

| Procedure |
- In a large bowl, mix all the ingredients well to form thick batter. Add water to adjust consistency which should be close to beaten yogurt.
- Heat a non-stick/cast iron pan and brush with butter.
- Take one ladle full of batter and drop it gently in the middle of the pan.
- When you start seeing bubbles, flip over, roast well.
- Serve with agave nectar or maple syrup.

Happy Vinayaka Chavithi!
Ganesh Chaturthi/Vinayaka chaviti is celebrated by Hindus in honor of Shiva and Parvathi ’s progeny – Ganpati / Ganesh. Several delicacies are offered to Lord Ganesha for he is known to be quite the foodie!! For this year, I made the idol out of red clay from Michael’s.
Here are some photos:


I dried the idol under a fan and did not bake it. Just dried it. Here is the altar decorated with mums (chamanti) and patri – holy fodder for the elephant god.

And the delicacies for offering (neivedyam)
In the photo are – Tamarind Rice (pulihora), Steamed rice flour dumplings(kudumulu), Jaggery coconut laddu, Rice and Mung porridge (pulagam), Curd rice (daddojanam), Sweetened rice (bellam thiyyannam)
| Recipe for Kudumulu – Steamed Rice Dumplings Filled with Jaggery and Coconut |
| Ingredients |
- For Dumplings
- Rice Flour – 1 cup
- Hot water – 1/2 cup
- Salt – a smidgeon
- Ghee – 1 tsp
- For the filling
- Fresh grated coconut – 1 cup
- Jaggery – 1/4 cup (Adjust this according to your taste)

| Procedure |
- Boil water and add the flour, salt and ghee.
- Mix it into a pliable dough.
- Mix jaggery and coconut until well incorporated.
- Roll out the rice flour dough into a circle of 4 inch diameter; place a roll of jaggery coconut mixture in the center of the circle and fold it to form a half-circle. Use water to glue back open ends.
- Repeat step 4 with the rest of dough.
- Steam cook the dumplings for about 15 mins.
Note: Idli pans are useful to cook the dumplings.

Seattle is the epicenter of all things awesome!!! If you guys haven’t tried this delicately flavored brand of soda based out of Seattle, you should do so right now.

N and I are trying to reduce carb intake and to include more fruits in our diet. I found that Smoothies are a really good way of accomplishing that. This post is to chronicle some combinations that rocked my world
Please adjust the ratios according to your taste. This is just a rough guideline for me so I have something to refer to. When adding nuts, I put them in warm water for about 10 mins before mixing them in.
