Announcing RCI : Gujarati Cuisine

Published by mythili at 1:02 pm under Events,RCI - Gujarat

RCI is such a beautiful concept – an eloquent celebration of India. And kudos to Lakshmi of Veggie Cuisine for making this happen. I signed up to host RCI for Feb 08 and my choice of cuisine is Gujarati Cuisine.

The province of Gujarat is in northwestern part of India surrounded by Maharastra(south), Madhya Pradesh(east), Rajasthan (North east) and Pakistan (our neighboring country) on the north. Gujarat(Porbandar) is also the home state of Mahatma Gandhi the Father of our Nation.

Gujarati cuisine refers to the cuisine of the state of Gujarat, India. It is predominantly vegetarian which is why I like it. Also there is quite a bit of pun directed towards the natives of Gujarat a.ka.Gujjus (as they are colloquially addressed) for their frugal tendencies. You gotta watch Kal Ho na Ho for this.

Ok back to RCI. Wiki has some good information to get you started on Gujarati Cuisine. You can find it here.

  24. [...] Chaas is made of yoghurt …it is a spiced buttermilk….to be had on its own or to wash down a full meal….chaas can be mildly or strongly spiced, seasoned or not….the avatars it can take on are many….all delightfully satisfying …..this is off to RCI – Gujarat, hosted by Mythili of Vindu this month, and the brain child of Lakshmi of Veggie Cuisine…. 25. [...] Method 1. Pressure cook plantain with peel, cauliflower, peas. 2. Take the peels of plaintains off. Grate them and keep aside. Mash the rest of the cooked vegetables. 3. Heat butter. Add cumin seeds, pav-bhaji masala, bell pepper. 4. Stir fry for a few minutes. Now add tomatoes. Stir fry again for 5 minutes. 5. Add mashed, grated vegetables. Add 1 cup water. 6. Stir in Amchoor powder, chili powder, salt to taste 7. Simmer for 30 minutes. Add more pav-bhaji masala if needed 8. Serve hot with butter, cilantro, and lemon wedges. Note – 1. Though the plaintain was pressure-cooked, I really had hard time mashing it with the potato masher. I grated the cooked plantains.
