Spinach Moong dal stir fry (Pesara pappu Palakoora)

N has been wearing spectables for more than 10 years now. What with the jobs we do, it takes a toll on our eyes too. A recent diagnosis revelead not so pleasant facts about his eyesight. Given this I try to incorporate as much carrot ( apart from making him drink Odwalla’s carrot juice everyday) and leafy vegetables in to our diet for the much needed Vitamin A.

I like cooking dals with leafy vegetables but once in a while I like making the stir fry too. The stir fries are lot more faster to cook.

–ingredients———————————

  • Spinach – 1 bunch
  • Moong dal – 1/4 cup
  • Onions chopped – 1/4 cup
  • Green chillies – 4 to 5
  • Jeera / cumin – 1 tsp
  • Turmeric – a pinch
  • Ginger and garlic paste – 1 tsp
  • Coriander chopped – 1/4 cup

 

 

–procedure————————————-

  • Soak moong dal in little water. Keep aside. 
  • Heat about 1 tbsp of peanut / vegetable oil in a pan.  Add cumin to it. Once it starts to splutter, add onion, green chillies and ginger garlic paste
  • After about 2 mins add the moong dal.
  • After about 5 mins add the leafy vegetables. Add turmeric and salt (according to taste). Stir well.
  • Fry for about 10 – 15 mins until there is no raw smell.
  • NOTE : This is the generic fry recipe for any leafy vegetable. Just substitute spinach with any variety of green.
  • Serve hot with rice or chapati

    mom used to stir fry with ginger and chillies
    moong dal is good thing
    but y corriander

    Raji – Addition of coriander brings great aroma and a nice taste. Trust me and try it once.

    Hi Mythili,carrots and palak are great for general health but it’s too late to help the bad eye sight now! You can not reverse the damage except surgery.I wear glasses too (Myopia) and am going for Lasik surgery in 2-3 months.

    Palak dish looks delicious,and a very clear photo.I love it,thanks for the recipe:))

    I love the simplicity of a leafy stir fry, I haven’t tried this with moong dal, it looks delicious!

    Asha – I thought so too, but N’s doctor had advised otherwise. Hence the Vit. A and not only that carrots are excellent souces of anti-oxidants. :) Good luck with your surgery :)

    hai,
    nice one i love it too.i make this very often too.Do u use whole wheat flour for chapati(pillsbury).
    i too use that its very smooth but the colour is different than we have regularly but it has bran in it which is good.this combo is good.
