Just beet it !! (Simple beetroot fry)
I always loved beetroot just for the color. And if you are indeed lucky to find some fresh beets, the sweetish taste is simply to die for. I make a stir fry with fresh beets which is like super fast. Of course the only difficult part of cooking beets is cutting them into small pieces. Good exercise though!
Learn more about the nutritional values of beetroot here and here(wiki). In the first link, I read that the fresh greens of beetroot are an excellent source of beta-carotene, calcium and iron. I have never used the fresh greens of beetroot in cooking. Will try one day now that I have learnt they are so nutrient-rich.

Simple fry with Beetroot
–ingredients————————————
- Fresh beetroots chopped into 1/2 inch cubes – 2 cups
- Oil – 2 tbsp
- Coriander-Cumin powder – 1 tsp
- Salt
- Dry Red chillies – 3
- A pinch of turmeric
–procedure————————————–
- Heat oil in a frying pan and add the cumin-coriander powder.
- After 10 secs add the red chillies and turmeric.
- Then add the chopped beetroot and fry till the beets are tender.
- Add salt and serve with hot rice.

That doesnt look like a half and half distribution.
One part is almost twice the size of the other.
I love beetroot, it’s such a pretty colour and tastes so sweet! When I was young I used to peel them and eat them whole like apples! Nowadays it is my Dad who eats most – he consumes lots of the juice. I make a very simple recipe from beetroots stir fried very lightly with sesame seeds and spices.
