Aloo kurma – Potato Curry
Anything involving potatoes is somehow tasty, has gazillion carbs, and is easy to make. So for the less informed, I moved into a new house and setting up a kitchen is not yet complete. I actually set out to make Dum Aloo, because N was in town and that is his favorite but ended up making aloo kurma just because it did not require a blender and I don’t yet have a blender. Anyways here is the easiest recipe one can conjure up, yet with so much aroma and taste. Again coconut does the magic here. This is for my mom who taught me this simple recipe. And why not today is her birthday too !!!
Ingredients
4 medium sized potatoes (aalugadda, aloo) – Finely chopped
Finely chopped tomato – 1
Grated coconut (kobbari) – 4 tsp
Finely chopped onions(ulligadda, pyaaz) : 1/2 cup
Ginger : 1 inch piece
Garlic : 1 clove
Coriander : 1/4 cup
Garam masalu : 1 tsp
Finely chopped green chillies: 3For Tempering
Oil – 3 tbsp
Cumin seeds : 1 tsp
Asafeotida : pinch
Turmeric : pinch
Curry leaves : 8
Procedure:
Heat oil in a heavy sauce pan . Add cumin seeds, asafoetida, turmeric powder and curry leaves. Meanwhile crush the garlic and ginger into a coarse mixture. Add this along with green chillies and onions. Now crush the coriander using a pestle ( I use a copper one that I got from India) and add. Let the onions fry for around 3-4 minutes. Then add finely choopped tomatoes and wait until the tomatoes are cooked. When you are sure that tomatoes are cooked add garam masala and let it sink into the ingredients in the pan. Now add coconut, potatoes and a cup water. Cover and cook until the potatoes are tender. Finally add salt (salt is the final final thing I usually add to any dish- my theory is that it actually expedites the boilng) according to taste and serve with rice or chapatis.
